Ingredients
- 1 cup ground meat
- 1 onion
- 1 carrot
- 1 celery stalk
- 1 tomato
- 1 cup vegetable or chicken broth
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 tablespoon herbes de Provence
- 1 tablespoon salt
- 1 tablespoon pepper
Preparation
1. In a pan, heat the olive oil and brown the ground meat until it is well cooked. Set aside the meat in a bowl.
2. Peel and chop the onion, carrot, and celery stalk into small pieces and place them in the bowl of a handheld blender. Blend until you have a smooth puree.
3. In the same pan, heat the tomato paste and add the onion, carrot, and celery puree to it. Cook for about 5 minutes until the vegetables are tender.
4. Cut the tomato into small pieces and add it to the pan with the vegetables. Pour in the vegetable or chicken stock and add the herbes de Provence, salt, and pepper. Simmer for about 10 minutes.
5. Add the ground meat to the pot and mix well. Simmer for about 10 minutes to allow the vegetables to become tender and the flavors to blend.
6. Pour the soup into the bowl of a handheld blender and blend until you get the desired texture. You can add a little water if you find the soup is too thick. Serve the soup hot, accompanied by toasted bread croutons if you like.
